Basic:

 

Kale

1 cup grated

Broccoli

1 cup in pieces

Mushrooms

3 cups sliced

cooked azuki beans

100 gr

Red apple

1

nutritional yeast

1 tablespoon

 

 

Dressing:

 

olive oil

2 table spoon

Ground sesame seeds

1 table spoon

Dried oregano

1/2 teaspoon

Miso

1 teaspoon

Salt

 

 

 

 

 

Preparation

 

Let's begin with the dressing: mix all the ingrediens and pour them over the kale and broccoli.

 

Cook the mushrooms for 3 minutes, or until they lose their juice.

 

Place all the ingredients, besides the nutritional yeast, in a mixing bol and mix well. Pour the nutritional yeast over the salad.

 

We use broccoli and kale because cruciferous vegetables have sulfur compounds that have shown ability to remove carcinogens and kill cancer cells. Mushrooms have proteins that bind abnormal cellls and prevent them from replicate, preventing the spread of cancer. Sesame seeds are rich in vitamin E an important free-redical fighter. Miso is a probiotic, that is, a friend for our gut and therefore for our overall health.
